Eggnog cookies have such a special place in my heart.  I make them every year for my holiday cookie tray, but this year when I have not been baking I have also been going over each and every post on this site. It had been a long process but it has also been fun, albeit slightly embarrassing at times look back.
This recipe for eggnog cookies was my first brush with “going viral”. I had only been blogging for about 10 months at the time, and in all honesty, it showed in the post. The picture was poorly lit, I wrote one paragraph about eggnog and hit the publish button. Somehow, some way it was featured on Yahoo’s Lifestyle interest tab, and a week later it was listed as one of 10 Christmas Cookies To Eat, Give Away, Or Use As Bribes on the Frisky.

So, when I was revisiting this recipe while doing my Christmas baking and cleaning up my website I was surprised that I felt kind of nostalgic about this recipe. Sure, it needed a solid spellcheck and better pictures, but the recipe has stood the test of time. I return to this recipe year after year for my cookie tray and it is always fun to remember sitting in front of my computer watching my Google Analytics blow up and realizing my mother wasn’t my only reader. So after I baked up this year’s batch of Soft Eggnog Cookies, I snapped a few quick pictures and updated the post to try to do the recipe justice.

Why did this recipe do so well with it’s horribly written post and poorly lit pictures 3 years ago? This recipe is really good! In fact, These cookies are so good I buy eggnog specifically for the purpose of making these cookies. I have found they are really a pleasant surprise on holiday cookie trays. Even people who claim to not like eggnog, like eggnog cookies. They are soft and creamy, but bursting with the aroma and flavor of vanilla, cinnamon, and nutmeg. The addition of rum in the glaze really takes these cookies over the edge to amazing, but is totally a matter of personal preference, and can be substituted with additional eggnog.

Prep Time: 15 minutes
Cook Time: 10 minutes
Additional Time: 2 hours
Total Time: 2 hours 25 minutes

Rich, soft, creamy and cakey these cookies are bursting with the aroma and flavor of vanilla, cinnamon, and nutmeg.

Ingredients

For the Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 cup eggnog
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon

For The Glaze

  • 2 cups confectioners’ sugar
  • 5 Tablespoons eggnog
  • 1-2 teaspoons spiced rum *optional but good
  • 1/4 teaspoon ground nutmeg
  • Additional Nutmeg for sprinkling on top of cookies

Instructions

  1. In a mixer fitted with a paddle attachment beat the butter and sugar until light and fluffy. Add the egg and beat well. Then add the eggnog and mix again.
  2. Sift together the flour, baking soda, baking powder, salt, cinnamon and nutmeg. Then turn the mixer on low and slowly add the flour mixture to the wet ingredients until everything is just combined. Cover dough with plastic wrap and chill it for at least two hours.
  3. Preheat the oven to 350ºF. Drop dough by the round teaspoonful onto lined cookie sheets. Bake one sheet at a time for 10 to 12 minutes, or until the tops are lightly golden. Cool cookies on a wire rack.
  4. To make the icing stir together the confectioners’ sugar, eggnog, rum and nutmeg. Icing the cookies when cooled. Sprinkle cookies lightly with nutmeg before the icing dries.

  1. I’m curious about how you store these cookies, do they need to be refrigerated? Since eggnog requires refrigeration, and there are eggnog in the cookies and the glaze. Don’t want to be serving spoiled cookies! Thanks!

    1. Hi Becky, This is a good question! I have never attempted rolling this dough out. The dough is still quite soft after refrigerating, you would probably have to use a lot of flour the make handling the dough easier, and I am not sure about how they would spread in the oven during baking.

  2. Fantastic cookies! One question- why haven’t you posted these to allrecipes so more people can enjoy them?!? These cookies are heavenly cake-like bites of deliciousness! I would only make one change: bake them a few minutes longer. Right about 12-14 minutes is perfect. I took the first ones out at 10 and could still taste raw flour. I subbed vanilla extract for the rum- only because I didn’t have any and the frosting was delicious. Thanks for the great recipe. It’s a keeper!!

      Honestly, I don’t have a good answer for not posting them on Allrecipes. I use Allrecipes all the time, but for some reason it had not occurred to post them there. Until now.
      I am definitely going to take your advice and post them there a little later tonight!

    1. I made these last night and they are awesome! I was able to make 4 dozen. I also used amaretto instead of spiced rum since that is what we usually add to eggnog around here and it is really good. Thank you!!

    2. I have never been able to get an accurate count, my husband, and sometimes me :-/ eat them as they come out of the oven LOL

  3. I noticed you never actually used the 1/2 tsp salt in the recipe….I’m assuming it’s added to the flour mixture…?

      1. Hi Mary, Sorry about that they must of been omitted somehow when I moved them over from my old site. I have updated the recipe, they are sifted in with the dry ingredients.

  4. I just made these! I like that there is actually eggnog in them. Haven’t tried one. They are for my father’s motorcycle club Christmas party tomorrow. The icing doesn’t look like the picture. It came out with the consistency of beaten eggs. Goopy. I thinned it out with regular milk and that helped a little. I drizzled them on the cookies anyway so we’ll see how it goes tomorrow! I will definitely keep the recipe. Thank you!!
